Shredded Flank steak “Old Clothes”

Don't be fooled, Ropa Vieja (in English: Old Clothes) is a favorite version of shredded flank steak in a tomato sauce base.


1 small onion

1/2 teaspoon salt

1/4 cup dry wine

2 cloves garlic

1 bay leaf

1 pound skirt (pre-cooked for beef broth or other stew)

1 small pepper

1/2 can of bell peppers

1/4 cup olive oil

3/4 of tomato sauce


1Shred the meat into thin strands.

2Cut the peppers into thin strips and the onion into thin rings.

3Stir in the hot oil the crushed garlic cloves and the chopped onion, then add the peppers and stir it a bit.

4Add tomato sauce, salt, bay leaf and wine and allow it to cook on low heat for about 15 or 20 minutes, stirring frequently so that it does not stick.

5Roasted peppers (from a jar) be added minced, ground or used for garnish.
