Broken eggs with Serrano ham

  • Yields: 4 Servings


4 medium sized potatoes
4 eggs
4 Serrano ham slices
Olive oil
Salt and pepper



Peel and cut the potatoes into thick chunks, such as to make an omelet. Fry them over medium heat until tender and begin to brown. Remove them with a slotted spoon and season with salt and pepper to taste.
In the same oil, cold eggs (soft or hard, according to your taste).
In another pan, with a few drops of oil Hot, ham slices. Cook them just to warm them up and change their color a little.
Finally mix eggs and potatoes carefully and place in a mold that yields a serving. Put the ham slices on the serving plate and turn the mold mixture over.
