6 tomatoes

2 tender onions

1 clove garlic

salt and sugar

3 medium potatoes

3 medium eggs

1/3 cup grated Parmesan cheese


1Peel the tomatoes and cut into medium pieces. Cut the garlic into thin sheets.

2Put everything in a casserole and cook at low temperature for 45 minutes. Season with a little salt and sugar to your liking, optional.

3Wash the potatoes and cook in plenty of salt water.

4Remove, drain, skin and mash until mashed. Add the butter and nutmeg.

5Preheat oven to 375 ° F.

6Mix the puree with the tomato sauce.

7Add egg yolks and egg whites to the snow.

8Grease the molds with earthenware and pour the mixture.

9Sprinkle with cheese.
