Peel and cut the potatoes into thick chunks, such as to make an omelet. Fry them over medium heat until tender and begin to brown. Remove them with a slotted spoon and season with salt and pepper to taste. In the same oil, cold eggs (soft or hard, according to your taste). In another pan, with a few drops of oil Hot, ham slices. Cook them just to warm them up and change their color a little. Finally mix eggs and potatoes carefully and place in a mold that yields a serving.
